Structure and Location of Taste Buds

The tongue is covered with projections called papillae, which play a crucial role in the sense of taste. Taste buds are specialized sensory organs found primarily on the sides of papillae, but also on the soft palate and cheeks.

  • Filiform papillae: Sharp, with no taste buds.

  • Fungiform papillae: Rounded, contain taste buds.

  • Circumvallate papillae: Large, contain taste buds.

Structure of Taste Buds

Taste buds are composed of gustatory cells, which act as the receptors for taste. These cells possess gustatory hairs (long microvilli) that are stimulated by chemicals dissolved in saliva.

  • Gustatory cells: Sensory receptors for taste.

  • Gustatory hairs: Microvilli that detect dissolved chemicals.

  • Basal cells: Frequently replace taste buds.

Neural Pathways of Taste

Impulses from taste buds are carried to the gustatory complex by several cranial nerves, as taste buds are distributed in different areas of the oral cavity.

  • Facial nerve (cranial nerve VII): Innervates taste buds in the anterior two-thirds of the tongue.

  • Glossopharyngeal nerve (cranial nerve IX): Innervates taste buds in the posterior one-third of the tongue.

  • Vagus nerve (cranial nerve X): Innervates taste buds in the pharynx and epiglottis.

Types of Taste Sensations

There are five primary taste sensations, each corresponding to specific types of chemicals:

  • Sweet: Responds to sugars, saccharine, and some amino acids.

  • Sour: Responds to hydrogen ions (acids).

  • Bitter: Responds to alkaloids.

  • Salty: Responds to metal ions.

  • Umami: Responds to the amino acid glutamate or the "beefy" taste of meat.

Developmental Aspects of the Special Senses

Embryonic Development of Special Sense Organs

Special sense organs, such as those for taste and vision, are formed early during embryonic development. Their proper formation is critical for normal sensory function.

  • Maternal infections: Infections during the first 5 or 6 weeks of pregnancy may cause visual abnormalities and sensorineural deafness in the developing child.

  • Congenital ear problems: Usually result from missing pinnas and closed or missing external acoustic meatuses.

Developmental Aspects of Vision

Vision is a sense that requires significant learning after birth. Infants are born with poor visual acuity (farsightedness) and lack color vision and depth perception.

  • Visual acuity: Infants are farsighted and have poor vision at birth.

  • Color vision and depth perception: Not fully developed at birth.

Example: An infant's ability to focus and distinguish colors improves gradually during the first months of life as the visual system matures.
