Introduction to Thiols

Thiols are a class of organic compounds characterized by the presence of a sulfhydryl (-SH) functional group attached to a hydrocarbon chain. They are structurally similar to alcohols, but with a sulfur atom replacing the oxygen atom in the hydroxyl group.

Properties of Thiols

Thiols have distinct physical and chemical properties due to the presence of the sulfur atom.

  • Odor: Thiols are known for their strong, often unpleasant odors. Many are described as "skunky" or similar to rotten eggs.

  • Occurrence: Thiols are found in nature, especially in foods such as cheese, onions, and garlic. The characteristic smell of skunk spray is also due to thiols.

  • Other names: Thiols are also called mercaptans. For example, beta-mercaptoethanol contains both an alcohol and a thiol group.

  • Food chemistry: The strong odors of some cheeses, onions, and garlic are due to the presence of thiols.

  • Skunk spray: Contains thiols, which are responsible for its pungent smell.
