Korean Beef & Broccoli Bowl
As a busy student, it can be difficult to find time to cook. When I do have time, it’s also difficult to figure out what I want to eat. After a year of cooking for myself and experimenting with various recipes, one dish I always find myself coming back to is a Korean Beef and Broccoli Bowl. It’s super easy to make, healthy, and of course delicious! I often use this recipe to meal prep for the week since it makes multiple servings. This recipe is originally from Miss in the Kitchen. Enjoy!

Total time: Approximately 30 minutes
Ingredients:
- 1 1/2 lbs lean ground beef
- 4 garlic cloves, minced
- 1/2 cup soy sauce
- 1/2 cup orange juice
- 1/2 cup brown sugar
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 3 cups cooked rice
- 3 cups steamed broccoli
- 2 sliced green onions for garnish
- 1 tbsp sesame seeds for garnish

Instructions:
- In a medium-sized bowl, mix soy sauce, orange juice, brown sugar, sesame oil, and cornstarch.
- Cook ground beef in a skillet over medium-high heat, breaking into small pieces and stirring often. Drain excess grease if necessary.
- Add garlic to the beef, stir, and cook until fragrant.
- Add the sauce to the beef, stir, and let simmer on low heat for 5 minutes.
- Serve over rice and broccoli. Top with green onions and sesame seeds.
