Korean Beef and Broccoli Bowl

As a busy student, it can be difficult to find time to cook. When I do have time, it’s also difficult to figure out what I want to eat. After a year of cooking for myself and experimenting with various recipes, one dish I always find myself coming back to is a Korean Beef and Broccoli Bowl. It’s super easy to make, healthy, and of course delicious! I often use this recipe to meal prep for the week since it makes multiple servings. This recipe is originally from Miss in the Kitchen. Enjoy!

Servings: 6

Total time: Approximately 30 minutes

Ingredients:

  • 1 1/2 lbs lean ground beef
  • 4 garlic cloves, minced
  • 1/2 cup soy sauce
  • 1/2 cup orange juice
  • 1/2 cup brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 3 cups cooked rice
  • 3 cups steamed broccoli
  • 2 sliced green onions for garnish
  • 1 tbsp sesame seeds for garnish
Korean Beef & Broccoli Bowl

Instructions:

  1. In a medium-sized bowl, mix soy sauce, orange juice, brown sugar, sesame oil, and cornstarch.
  2. Cook ground beef in a skillet over medium-high heat, breaking into small pieces and stirring often. Drain excess grease if necessary.
  3. Add garlic to the beef, stir, and cook until fragrant.
  4. Add the sauce to the beef, stir, and let simmer on low heat for 5 minutes.
  5. Serve over rice and broccoli. Top with green onions and sesame seeds.
